Chicken Mole Poblano with Tortillas and Salsa
Chicken Mole Poblano is a traditional Mexican dish that takes succulent, juicy chicken that’s cooked in a rich Mole sauce and serves it with soft corn tortillas and a fresh salsa of crisp lettuce, tangy cherry tomatoes and creamy avocado to cut through the decadent sauce.
What makes this dish extra special is the addition of my Mole Poblano Sauce. This decadent sauce has deep, rich notes of cocoa, smoky chillies, sweet currants and a slight buttery crunch from nuts. This unique sauce is very traditional to Mexico and can be used to add a hit of flavour to loads of different dishes. Mexican Mole Poblano Sauce
Method
- Heat oven to moderate 180 degrees celsius.
In a deep dish baking pan add the chicken breasts and cover with the mole poblano sauce.
Cook in the oven until the chicken is cooked through (approx 25-30 min). Test with a skewer to ensure fully cooked. - Once the chicken is cooked remove from the oven and serve with heat torillas and combine all the remaining ingredients into a salad to serve .
