Harissa lamb and Lentil stew
This hearty Harissa Lamb and Lentil Stew will warm you from the inside out! Satisfying and flavour packed, this dish is perfect for when the weather gets chilli. Simply throw all the ingredients in one pot and put your feet up on the couch. For even more flavour impact, make this stew ahead of time and reheat it the next day – the longer these flavors infuse the better! Serve with crusty bread or rice or try adding in some potatoes in the final 30 mins of cooking to soak up all that delicious flavour.

Method
- Heat olive oil in a deep skillet, coat lamb with harissa spice mixture, add garlic & onion and cook until browned and caramelised (the caramelisation of the spice with the meat is important to obtain the best flavour), add lentils, carrots and stock/water. Bring to the boil and simmer for 2 hours or until meat is tender.
This dish is great to make a day ahead and reheat.
Serve with warm bread and sprinkle with fresh coriander and a squeeze of lemon.
